: Density and sound velocity of solutions of carbohydrates such as glucose, fructose and sucrose in water and in aqueous solutions 10% w/w of polymer of PPG400, PEG400 and PEG4000 at T = (288.15, 293.15, 298.15, 303.15 and 308.15) K have been measured. From the experimental density and sound velocity data, isentropic compressibility values of solvent and aqueous solution of polymer-carbohydrate have been obtained and by using them, hydration number of carbohydrates were calculated. Apparent molar properties such as apparent molar volume, and apparent molar isentropic compressibility of carbohydrates were calculated and discussed about sweet property of carbohydrates. All results are discussed based on locations and type of interaction of OH groups in carbohydrate molecules
