Inulin, an economically important component of root chicory (Cichorium intybus var. sativum) has many applications in food and non-food industries. Production of inulin is hampered by a group of enzyme called fructan 1-exohydrolase (1-FEH). Increased 1-FEH activity results in a massive breakdown of inulin. Reducing the activity of 1-FEH using RNA interference could result much more longchain inulin in root chicory which is in favour of inulin production
